I found it on wheels at a food truck called Sensational Salads and Wraps and in an urban treehouse called Silo Terrace Oyster Bar, where they make one of the best Caesar salads in the city. I found that satisfaction in a custom-built tuna salad at First Course Salad Kitchen and in a bowl of righteous rabbit food with grilled duck at Huisache Grill in New Braunfels. Something with protein, with power, with personality - fulfillment without all that extra filling up. But I was looking for salads that bring the same kind of satisfaction as traditional comfort food. Shades of green radiate from salads all around San Antonio and beyond, from the shredded iceberg lettuce on a Tex-Mex combo plate to the torn kale that feels more like punishment than redemption.
